
This title could be a little misleading. I am about the furthest thing from a vegan. I am 100% a meat, dairy, seafood consumer and I LOVE it. However, Dustin and I have been buying vegan cookies from EarthFare for years and they are so yummy! I wanted to try and recreate the recipe and it turned out really great!
I bought all of my ingredients from Lowe’s Foods. If you’re in the Carolinas you need to check them out. It is one of the coolest grocery stores I’ve ever been in.
Start by heating the oven to 375 degrees. Then, in a large bowl, whisk coconut oil, brown sugar and vanilla until they are combined.
Next, add applesauce and coconut milk.
In a separate bowl, add flour, baking soda, and salt and whisk well to combine.
Combine the dry ingredients with the wet ingredients and mix well.
I still had some small chunks of coconut oil at this point, and that’s okay! Just mix them in as well as you can. Next, fold in the chocolate chips.
Place 2 tablespoon scoops on a cookie sheet about 2 inches apart.
Bake for 9-10 minutes or until golden brown on the edges. Remove from the oven and top cookies with extra chocolate chips and sea salt.
Allow cookies to cool and then enjoy! You won’t even know this recipe is vegan, these cookies are so tasty! For the full recipe check under the “Recipe” tab. I hope you love these as much as Dustin and I do!
