Ingredients
- 24 oz egg whites or 12 eggs
- 1/4 cup yellow onion
- 1/4 cup red bell pepper
- 1/4 cup green bell pepper
- 1/4 cup mushrooms
- 1 cup spinach
- Salt and pepper to taste
- Preheat the oven to 350 degrees.
- Chop all veggies to desire size.
- Layer veggies in a greased muffin tin.
- Fill each cup 3/4 (or a little more) full.
- Bake for 20 to 25 minutes or until cooked through.
- Store in the refrigerator and heat for 30 seconds in the microwave before eating.
