Sunday Morning Hash


  • 1 package Oreida Hashbrowns
  • 8 oz sausage or bacon
  • 1/2 green bell pepper
  • 1/2 yellow onion
  • 1/4 shredded cheddar cheese
  • 4 eggs
  1. Preheat the oven to 350 degrees. Heat a cast iron pan on medium high heat and spray with cooking spray.
  2. Dice the bell pepper and onion.
  3. Add sausage (or barely cooked bacon), pepper, and onion to the pan and cook for approximately two minutes.
  4. Add frozen hash browns to the pan and stir until the sausage, peppers, and onions are integrated into the potatoes. Cook for 7 minutes.
  5. Drizzle the mixture with olive oil and add salt a pepper to taste. Flip the hash brown mixture and cook for 5 minutes.
  6. Make 4 small divots in the hash browns and add one egg to each hole. Bake for 5 minutes. The eggs may look slightly undercooked, but that’s okay. Remove from the oven and top with cheese. Cover the cast iron and allow cheese to melt and eggs to continue cooking for approximately 2 minutes.
  7. Serve and enjoy! I like to add a little Frank’s Hot Sauce to mine to give it a little extra kick!
