Cauliflower Puree

I’ve tried a lot of cauliflower substitutes: cauliflower rice, cauliflower pizza crust, etc. My favorite way to eat cauliflower, though, is to puree it. It tastes like mashed potatoes and it seriously delicious. I’ve been using this recipe since this summer and both Dustin and I love it.

This recipe is so simple! Start by sautéing chopped cauliflower in half a cup of water.

Once soft (about 10 minutes), put the cauliflower in a food processor or blender and add melted butter, goat cheese, and salt and pepper to taste.

Puree the mixture until there are no chunks. Enjoy!

This is such an easy side dish to make and could be altered with a number of ingredients. You could add garlic and an herb flavored goat cheese or bacon bits and cheddar cheese. So simple and so delicious!
