Easy Egg White Cups

Ingredients

  • 24 oz egg whites or 12 eggs
  • 1/4 cup yellow onion
  • 1/4 cup red bell pepper
  • 1/4 cup green bell pepper
  • 1/4 cup mushrooms
  • 1 cup spinach
  • Salt and pepper to taste
  1. Preheat the oven to 350 degrees.
  2. Chop all veggies to desire size.
  3. Layer veggies in a greased muffin tin.
  4. Fill each cup 3/4 (or a little more) full.
  5. Bake for 20 to 25 minutes or until cooked through.
  6. Store in the refrigerator and heat for 30 seconds in the microwave before eating.
