Ingredients
- 1/2 cup coconut oil (solid)
- 1 1/4 cups light brown sugar
- 2 teaspoons vanilla
- 1/4 cup coconut milk
- 1/4 cup unsweetened applesauce
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
- Sea salt (optional)
Instructions
- Preheat oven to 375 degrees.
- Whisk coconut oil, brown sugar, and vanilla until well combined.
- Add coconut milk and applesauce and mix until combined.
- In a separate bowl add flour, baking soda, and salt and whisk to combine.
- Add the flour mixture into the wet ingredients and stir until combined. A wooden spoon works best because the batter will become thick.
- Fold in almost all 2 cups of chocolate chips and set the rest aside.
- Scoop 2-3 tablespoons of batter onto a cookie sheet. Space the dough about 2 inches apart.
- Bake for 9-10 minutes until the edges are golden brown.
- Remove from oven and top with additional chocolate chips and sea salt.
- Allow to cool for 15 minutes and enjoy!
