Vegan Chocolate Chip Cookies


  • 1/2 cup coconut oil (solid)
  • 1 1/4 cups light brown sugar
  • 2 teaspoons vanilla
  • 1/4 cup coconut milk
  • 1/4 cup unsweetened applesauce
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • Sea salt (optional)


  1. Preheat oven to 375 degrees.
  2. Whisk coconut oil, brown sugar, and vanilla until well combined.
  3. Add coconut milk and applesauce and mix until combined.
  4. In a separate bowl add flour, baking soda, and salt and whisk to combine.
  5. Add the flour mixture into the wet ingredients and stir until combined. A wooden spoon works best because the batter will become thick.
  6. Fold in almost all 2 cups of chocolate chips and set the rest aside.
  7. Scoop 2-3 tablespoons of batter onto a cookie sheet. Space the dough about 2 inches apart.
  8. Bake for 9-10 minutes until the edges are golden brown.
  9. Remove from oven and top with additional chocolate chips and sea salt.
  10. Allow to cool for 15 minutes and enjoy!
